  • Preheat your waffle iron so that it’s nice and ready when your batter is done. I personally prefer my waffles crisp, so I set mine about ¾ of the way to max.
  • In a large bowl, mix together the flour, salt, baking powder and sugar, the add the eggs, beating thoroughly. Add the milk, butter and vanilla, beating at low speed.
  • Chop pecans and dice the bananas, adding to the mixture and stirring with a spoon to mix them – you don’t want to beat the batter at this point, as the bananas will get mushy!
  • Spoon your batter onto the waffle iron and drizzle a teaspoon of maple syrup directly onto the top of the batter. Cook as directed (my waffle maker has a light that turns on when it’s ready).
