Preheat your waffle iron so that it’s nice and ready when your batter is done. I personally prefer my waffles crisp, so I set mine about ¾ of the way to max.
In a large bowl, mix together the flour, salt, baking powder and sugar, the add the eggs, beating thoroughly. Add the milk, butter and vanilla, beating at low speed.
Chop pecans and dice the bananas, adding to the mixture and stirring with a spoon to mix them – you don’t want to beat the batter at this point, as the bananas will get mushy!
Spoon your batter onto the waffle iron and drizzle a teaspoon of maple syrup directly onto the top of the batter. Cook as directed (my waffle maker has a light that turns on when it’s ready).
