Ingredients

  • 15 oz red velvet cake mix make sure it's a "premium" box of cake mix
  • 2 eggs
  • cup vegetable oil I used melted butter instead because I don't use vegetable oil. You can also substitute an equal amount of liquid coconut oil or unsweetened applesauce
  • 2 cups M&M's

Instructions

  • Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper.
  • In a large bowl, mix cake batter, eggs an oil (or whatever you used as a substitute) until you have a wet dough.
  • Do not expect this to look like a cake batter because you are not making a cake! Your dough will look like a cross between cookie dough and cake batter, and that is exactly what you want. Next stir in the plain M&M's.
  • Scoop by heaping teaspoonfuls and roll into ball in the palm of your hand. Be warned, your hands will get messy. This cookie dough is not very neat! ha!
  • Drop about two inches apart on your parchment-lined cookie sheet and bake at 350 degrees for 9 minutes.
  • Leave your cookies on the cookie sheet for a minute so that they have a chance to harden up a bit, as they will be very soft and pliable when you remove the from the oven. Using a spatula, remove them to a cooling rack.
