15ozred velvet cake mixmake sure it's a "premium" box of cake mix
2eggs
⅓cupvegetable oilI used melted butter instead because I don't use vegetable oil. You can also substitute an equal amount of liquid coconut oil or unsweetened applesauce
2cupsM&M's
Instructions
Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper.
In a large bowl, mix cake batter, eggs an oil (or whatever you used as a substitute) until you have a wet dough.
Do not expect this to look like a cake batter because you are not making a cake! Your dough will look like a cross between cookie dough and cake batter, and that is exactly what you want. Next stir in the plain M&M's.
Scoop by heaping teaspoonfuls and roll into ball in the palm of your hand. Be warned, your hands will get messy. This cookie dough is not very neat! ha!
Drop about two inches apart on your parchment-lined cookie sheet and bake at 350 degrees for 9 minutes.
Leave your cookies on the cookie sheet for a minute so that they have a chance to harden up a bit, as they will be very soft and pliable when you remove the from the oven. Using a spatula, remove them to a cooling rack.
