Easy Antipasti Appetizers Recipe

This Easy Low Carb Antipasti Appetizer Recipe is something that your guests are really love and it is a bite sized portion, so it makes for a perfect finger food!

Ingredients

  • 16 slices salami
  • 6.5 oz artichoke hearts marinated , drained and chopped
  • cup red peppers roasted and chopped
  • 4 ounces mozzarella mini cheese balls or "pearls"
  • 1 teaspoon dried basil or ¼ cup chopped fresh basil
  • salt and pepper

Instructions

  • Preheat oven to 375 and place 1 slice of salami per cup in a muffin tin. Press into the cup folding the edges if necessary to get the salami to stay inside of the cup.
  • Bake for 6-8 minutes or until slightly crispy. Cool completely.
  • In a bowl, add artichoke hearts, red peppers, cheese, basil and mix well. Season with salt and pepper to taste.
  • Spoon about 2 teaspoons into each salami cup. Refrigerate until ready to serve.
