Breakfast Fun: A Towering Waffle Cake Recipe

Ingredients

  • 1.5 cups flour
  • 1 teaspoon baking soda
  • 1 cup mashed really ripe bananas
  • ½ cup coconut oil for batter plus more for cooking
  • ½ cup brown sugar
  • up to 1 cup almond milk add slowly until you get the consistency you want
  • dash of sea salt

Instructions

  • Mix your batter and heat your skittle to medium. Grease the skillet again after each waffle for perfectly crispy waffles.
  • Allow the waffles to cool a little bit on a wire rack before stacking up. This will help the tower hold its shape and stand tall.
  • When everything is ready, stack up the waffles on a cake platter and then load with your favorite toppings. We poured warm pure maple syrup down over the top of a mount of fresh berries, fresh mint and some pea shoots.
