Mini Lemon Cheesecakes Recipe

Ingredients

  • 8 mini graham cracker pie crusts
  • 2 packages cream cheese softened
  • ½ cup white sugar
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon lemon zest
  • ½ teaspoon lemon extract
  • ½ teaspoon vanilla
  • 2 eggs
  • Fresh Lemon for garnish
  • Lime Zest for garnish or try Mint Leaves

Instructions

  • Heat oven to 350
  • In a mixing bowl, beat cream cheese and sugar until smooth. Add lemon juice, lemon zest, extract and vanilla. Mix well.
  • Add eggs, one at a time and mix until just blended.
  • Pour into 8 pie crusts.
  • Bake 18-22 minutes or until centers are no longer jiggly.
  • Let cool and refrigerate until firm. About 2 hours.
  • Garnish with thinly sliced lemons and lime zest before serving.
