Mini Lemon Cheesecakes Recipe
These Mini Lemon Cheesecakes are the best mini desserts recipe, and this sweet snacks recipe is perfect for easy snacks and Easter treats!
- 8 mini graham cracker pie crusts
- 2 packages cream cheese softened
- ½ cup white sugar
- 1 tablespoon fresh lemon juice
- ½ teaspoon lemon zest
- ½ teaspoon lemon extract
- ½ teaspoon vanilla
- 2 eggs
- Fresh Lemon for garnish
- Lime Zest for garnish or try Mint Leaves
Heat oven to 350
In a mixing bowl, beat cream cheese and sugar until smooth. Add lemon juice, lemon zest, extract and vanilla. Mix well.
Add eggs, one at a time and mix until just blended.
Pour into 8 pie crusts.
Bake 18-22 minutes or until centers are no longer jiggly.
Let cool and refrigerate until firm. About 2 hours.
Garnish with thinly sliced lemons and lime zest before serving.
