White Chocolate Coffee Cake Recipe

I love baking. The only thing I love more than baking is eating what I’ve baked immediately when it comes out of the oven. Especially when it’s this White Chocolate Coffee Cake Recipe made with real coffee and white chocolate chips – could it get any better?

Not really.

I’ve been on a International Delight Iced Coffee and Creamer kick lately – seriously, for someone who just began drinking coffee for the first time in her life a year ago, I’ve become quite the little iced coffee maven! Whenever I am at Walmart, I grab a carton…or three…and stock up on the great varieties of International Delight creamers too!

Yesterday I grabbed my Vanilla flavored International Delight Iced Coffee, my baking supplies and International Delight Coldstone Sweat Cream creamer and did some experimenting to come up with a creative #IcedDelight recipe.

I made a not-so-traditional coffee cake, with International Delight Iced Coffee and Creamer instead of milk and added white chocolate chips! It was SO GOOD. That’s right…it was a white chocolate coffee cake recipe and it was delicious!

White Chocolate Coffee Cake Recipe

Ingredients

  • 1 cup butter
  • 1 (8 ounce) package cream cheese
  • 1 1/2 cups granulate sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup International Delight Cold Stone Sweet Cream Creamer
  • 1/2 cup Vanilla International Delight Iced Coffee
  • 1 cup white chocolate chips
  • 1 teaspoon ground cinnamon

Directions

In a large mixing bowl or stand mixer, beat your butter, cream cheese and sugar for two minutes. Beat in your eggs and vanilla for an additional minute and then add your flour, baking powder, baking soda and the salt, beating for about 30 seconds after you add each one. Add your International Delight Iced Coffee and International Delight Creamer and beat for a minute.
Then the best part – gently stir in your white chocolate chips and cinnamon!

Pour into a greased loaf pan and sprinkle with an additional bit of cinnamon if you like! I love cinnamon so I always add extra!

Bake at 350 degrees for 1 hour and 5 minutes, or until you can insert a toothpick in the center of the bread and it comes out clean.

Now, this particular batch didn’t come out as chocolaty as I’d hoped…I’m a bit of a chocoholic, so I really, I can never have enough chocolate!

But the combination of the Vanilla International Delight Iced Coffee, the International Delight Cold Stone Sweet Cream creamer and the cinnamon…it was pure heaven!

    I haven’t had coffee cake in ages. I remember as a kid I refused to eat it because I took the name literally and thought it had coffee it in – boy did I miss out! 🙂

    I don’t drink coffee, but I LOVE coffee cake, and that looks so good! I bet the white chocolate chips add a nice twist to it.
