I took The Future of Protein Challenge from Beyond Meat. I substituted their lightly seasoned chicken strips for regular chicken in my daughter’s favorite recipe – chicken cacciatore. The beauty of Beyond Meat products is that you don’t have to do any special cooking or prep. You just substitute traditional meat for their plant-based products. Easy peasy.

Angeline loved it. She had no idea I’d used something other than real chicken strips. When I told her it was Beyond Meat, she was very surprised. I was surprised when she said I should make it that way all the time. If it can win over my carnivore child, Beyond Meat will satisfy anyone.

An Easy Chicken Cacciatore Recipe

Ingredients

  • 1 Package Beyond Chicken lightly seasoned strips
  • 1 Red Pepper sliced
  • 1 Green Pepper sliced
  • 1 White Onion sliced
  • 1 pint Button Mushrooms quartered
  • 1 28 ounce jar Spaghetti Sauce
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon garlic salt
  • 2 tablespoons olive oil
  • Pasta of your choice

Instructions

  1. Put a large pot over medium high heat and add olive oil and veggies, cover and saute until soft, about ten minutes.
  2. Add Beyond Chicken and pasta sauce, stir and then add the garlic salt and Italian seasoning.
  3. Cover and simmer for 30 minutes.
  4. Serve over pasta.
