Yesterday morning, I drove my husband to the airport for his first international business trip...to Barbados. This is what he sent me once he checked into his hotel. Nice, right? Way to make me jealous!
I knew that it would be a rough day for me, and that I would miss him terribly, so I arranged to hang out with a few friends in the afternoon. My husband and I usually make the hour-long drive up to my pal's for Sunday Fundays together...so I brought a friend with me to keep me from going crazy on the drive!
Have you ever had a Sunday Funday? I love them! Sundays are usually low-key, sitting around the pool or in the kitchen, talking crap, snacking, and having a few cocktails. We left by 6 pm - still early enough to get home, make dinner, spend time with the kiddo, and prepare for the next day. It's a great way to end a weekend!
I brought with me two bottles of Flip Flop Wine, and a new cocktail recipe book, Skinny Cocktails.
The Flip Flop wine was awesome! I had a Riesling and a Pinot Grigio, and we drank the Pinot Grigio as it was while we chilled poolside. The Pinot Grigio is from California, and it's light-bodied and really refreshing! While I find some Pinot Grigios to be too dry, this one was perfect! It was perfect for drinking while we laid out in the sun and chatted. It tasted of tropical citrus, ripe pear and had a nice zesty, clean finish.
We used the Riesling to make a white wine spritzer from a recipe in the Skinny Cocktails book. I personally love Rieslings - it's my favorite kind of wine - and this one was wonderful! It was a medium-bodied Riesling with delicate notes of peach, apricot and melon and had a satisfying, smooth finish. It had just enough sweetness without being too sweet, which is exactly how I like my Rieslings! We decided to use it in the white wine spritzers because we wanted to give them a little something extra.
The spritzers came out perfect and they were really easy to make.
Like most women, my girlfriends and I are trying to be more conscious of what we eat, and oftentimes we consume more calories than we realize because there are so many calories in alcohol and mixed drinks!
Skinny Cocktails: The only guide you'll ever need to go out, have fun, and still fit into your skinny jeans is a fantastic little book. It's full of recipes for cocktails that are simple to make, and are all low calories. Each recipe breaks down the calorie content so you know exactly how much you're consuming. This book is a great way to still have a delicious cocktail without using up all of your calories for the day. I love this little cocktail book!
I also tried a Pinot Noir from the Flip Flop Wines at home with dinner and I also loved it! I prefer a less dry red wine, and it was perfect!
