Of course, ice cream is everyone's favorite summertime treat, but why load up on all of those calories and sugar, not to mention artificial ingredients - when you can simply create these delicious homemade Popsicles with just two fruits and a some basic Popsicle supplies? Popsicle molds are pretty inexpensive and last for years, and Popsicle sticks are super cheap! This is a fun way to not only make healthy treats to cool down all summer long, but also a fun activity to entertain your children when they begin with the dreaded, "I am bored" whining about oh, 3 days after summer vacation begins...
This Pineapple Strawberry Ice Pops Recipe is perfect for those last remaining days of summer, or if you live in a location that is still warm in the fall. I just absolutely love pineapple and I am all about using fresh ingredients in desserts when we can! The flavors just POP! It doesn't hurt that this recipe contains two of my FAVORITE fruits - strawberry and pineapple! I almost always have fresh strawberries in the house, as they are a pretty low sugar fruit and they are so easy to snack on and mix into smoothies, top salads, etc. They are so versatile and so delicious - the perfect low carb fruity snack! Of course, I can't really say the same thing for pineapple, as much as I really love it!

Pineapple Strawberry Ice Pops Recipe Ingredients
- 1 cup fresh pineapple, cubed
- 1-2 tablespoons water
- ½ cup fresh strawberries, tops removed, hulled and washed
- Popsicle Mold
- Popsicle Sticks

In a small blender (such as a magic bullet) add together your pineapple and 1 tablespoon of water. Beat at medium speed until the pineapple is smooth, adding in additional water if necessary to create a smooth pineapple pulp. Using HALF of this mixture, pour it equally into each Popsicle mold. Reserve the remaining pulp in an airtight container in the fridge, as you will use it in a few hours, once this and then the strawberry sets.
Place a Popsicle stick into the Popsicle mold and freeze it for 2 hours. To freeze on an angle, simply prop up the mold in the freezer, making sure the pulp is angled in the mold. Double check your Popsicle sticks to make sure they aren't moving as well. This is necessary to get that pretty line in the finished Popsicles.
Puree the strawberries in a small blender and divide the puree equally into each of the 4 Popsicle molds, pouring it directly on top of the pineapple pulp. Freeze in the mold for 2 hours on the same propped up angle as you previously froze the pineapple pulp.
Add remaining reserved pineapple pulp to the Popsicle mold and freeze for 4 hours.
To remove from the Popsicle mold, run it under hot water for about 15-30 seconds and gently pull the Popsicle stick to remove it from the mold.

Did you love making Popsicles as a kid? I remember making all sorts of random frozen creations as a kid, but the one that really stands out is frozen bananas dipped in chocolate! I believe we used Magic Shell, but to be honest, it has been so long that for the life, of me, I simply can not remember.
