    Mocha Tres Leches Cake with International Delight

    I love International Delight Light Iced Coffee, especially the mocha flavor. Seriously? Best thing since sliced bread! I was asked by Tapfluence to help spread the word about International Delight's What's Your I.D.? contest and I thought...what better way than to create a new mocha tres leches cake recipe using International Delight Light Iced Coffee?

    I drink International Delight Light Iced Coffee almost daily - it has the perfect blend of coffee, creaminess and sweetness to get me started each morning!

    This is a small recipe, which will give you about 4 servings. Due to all of the milk in the recipe, this mocha tres leches cake does not hold up for very long in the fridge, so I find it best to make in small batches!

    Mocha Tres Leches Cake Recipe

    Ingredients

    ¼ cup and 2 tablespoons all-purpose flour
    ¼ teaspoon baking powder
    2 tablespoons unsalted butter
    ¼ cup white sugar
    1 egg
    ⅛ teaspoon vanilla extract
    ½ cup Mocha Internatiomal Delight Light Iced Coffee
    ¼ cup sweetened condensed milk
    ¼ cup evaporated milk
    ¼ cup and 2 tablespoons heavy whipping cream
    ¼ cup white sugar
    ¼ teaspoon vanilla extract

    Directions

    Preheat oven to 350 degrees and spray a small baking dish with non-stick cooking spray with flour - like Baker's Joy.

    In a medium bowl, beat the butter, sugar, egg and vanilla extract until light and fluffy. Add flour and baking powder and mix by hand until well blended.

    Pour into your prepared baking dish and bake at 350 degrees for about 15 minutes. I recommend pulling it out of the oven after 15 minutes and inserting a toothpick into the middle to check if it's done, if the toothpick comes out with batter on it, bake for an additional 5 minutes.

    Pierce your mocha tres leches cake several times with a fork.

    Whisk the Mocha International Delight Light Iced Coffee, condensed milk, and evaporated milk together and pour over the top of the cooled tres leches cake.

    Whip your heavy whipping cream with 1 teaspoon granulated sugar until it's fluffy, and spread over the top of cake. Refrigerate until you are ready to serve!
