After a long week on the sandy beaches of Punta Cana in the Dominican Republic, I sat down to work today and realized…I have no food in the house! As my stomach began growling around lunchtime, I ran over to our brand new Walmart to find some healthy lunch options in the Walmart Produce aisle and to grab some Jif Peanut Butter. I’ve had my fill of rich buffet foods – it’s time to get back to lighter, healthier eating!
I really love fresh fruit, and often eat apples and strawberries as a snack. However, I find that fruit or even veggies alone do not really satisfy my appetite – I need some sort of carbohydrate, protein or fat to make me feel like I’ve really had a meal. This is why we ALWAYS have Jif peanut butter in our house! A crisp Granny Smith apple and a few tablespoons of Jif Peanut Butter and my stomach is full and my waistline is happy!
After being in the Dominican Republic for six days to attend a fabulous destination wedding, I had a ton of work waiting for me when I came home…which meant that I spent the entire day at the computer, catching up on emails, drafting blog posts and on conference calls.
Today was NOT a day for a sit down lunch in the dining room! I grabbed a few of the groceries I purchased from the Walmart Produce aisle and decided to make myself a little lunch of fresh fruit and veggies with Jif Peanut Butter. I needed something that I could snack on in between phone calls and typing, and fruit and veggies fit the bill!
I love granny smith apples with Jif Peanut Butter, but celery is also a great snacking option when you’re in the mood to smother peanut butter on something!
Strawberries, well, they taste fab all on their own after a quick rinse in the sink.
Speaking of Jif peanut butter…are you a fan of creamy or chunky peanut butter? I used to only eat chunky peanut butter when I was a kid, but after having Angeline, I switched to creamy. She didn’t like the “chunks” in her peanut butter so we all ended up switching. Now I can’t imagine eating it any other way!
I’ve been experimenting with the different types of Jif peanut butter lately. Aside from the regular version of creamy and chunky, they also have this new low sodium natural version, as well as a honey version – they even have chocolate versions with a bit of mocha!
I have a small confession to make…
Sometimes I just eat my creamy Jif peanut butter right out of the jar.
Sometimes with a spoon…but sometimes I just grab the jar and scoop out a mouthful just with my finger!
Can you blame me?
