I probably say this every year, but it still rings true, so I will say it again: it’s difficult to get into the holiday spirit when you live in a subtropical climate, such as Miami. While people around the country are bundling up and experiencing their first snowfall of the season, here I am…on the beach.
I have a few tricks I utilize to get into the holiday spirit when I find it’s lacking; I travel to cold weather climates, I look at my friend’s photos on Instagram showing their snowmen, I go Christmas shopping…and I grab every single fall and winter weather item I can get my hands on, like this delicious Santa’s White Christmas coffee from Barnie’s Coffee!
Barnie’s coffees are roasted using high quality beans and unique flavor combinations, and this Santa’s White Christmas blend has been America’s favorite flavored coffee for almost 40 years – no, seriously! If you know coffee, you know that this holiday blend has been around for 37 years! Santa’s White Christmas is the holiday spirit in a cup, flavored with coconut, caramel, and roasted nuts. It’s perfect for getting yourself into the holiday spirit as well as the perfect gift for friends and family!
What better way to enjoy this delicious Barnie’s Coffee Santa’s White Christmas blend than with a little sweet treat? These No Bake Gingerbread Truffles are perfect for enjoying with your coffee, or making a batch and gifting them alongside the coffee as a nice holiday gift or hostess gift for a party you are attending this holiday season!
No Bake Gingerbread Truffles
- 1-1/2 cup finely crushed gingerbread/ginger snap cookies, divided
- 4 ounces cream cheese, softened
- 4 ounces white baking chocolate
Reserve 1 tablespoon of finely crushed cookie crumbs. Set aside.
Mix cookies and cream cheese together in a small bowl. Scoop into tablespoon size balls and refrigerate for about 30 minutes or until firm. Melt white chocolate according to package directions.
Dip each truffle into chocolate and place onto a piece of wax paper. Sprinkle with reserved cookie crumbs. Repeat until all truffles are coated in chocolate. Refrigerate for 15 minutes or until set.
