These No Bake Gingerbread Truffles are perfect for enjoying with your coffee, or making a batch and gifting them alongside the coffee as a nice holiday gift or hostess gift for a party you are attending this holiday season!
No Bake Gingerbread Truffles
- 1-½ cup finely crushed gingerbread/ginger snap cookies, divided
- 4 ounces cream cheese, softened
- 4 ounces white baking chocolate
Reserve 1 tablespoon of finely crushed cookie crumbs. Set aside.
Mix cookies and cream cheese together in a small bowl. Scoop into tablespoon size balls and refrigerate for about 30 minutes or until firm. Melt white chocolate according to package directions.
Dip each truffle into chocolate and place onto a piece of wax paper. Sprinkle with reserved cookie crumbs. Repeat until all truffles are coated in chocolate. Refrigerate for 15 minutes or until set.
