I’ve been looking for diet friendly Valentine’s Day recipe ideas because I want to be able to indulge without being afraid to step on the scale the next morning! Kristen from 360 Family Nutrition shared this delicious Valentines Day Brownie Kabobs recipe and I thought it would be perfect for those on diets like mine!
Valentines Day Brownie Kabobs
1 box brownie mix
1 cup coke zero or other diet soda
2 egg whites
30 strawberries with tops removed
1.5 chocolate of your choice
nonstick cooking spray
Notes: Now, while this Valentines Day Brownie Kabobs recipe begins with a basic boxed brownie mix, feel free to use your own from-scratch brownie recipe instead. I personally love using the brownie recipes on the back of cocoa powder canisters from Hershey’s and Nestle. I’ve heard that the Girhadelli brownie recipe on their box of cocoa is to die for, but I haven’t tried that one myself yet!
Preheat oven to 350 degrees and spray glass pan (13×9 inch) with non-stick cooking spray.
Melt chocolate for about 1 – 1.5 minutes in microwave (stir every 30 seconds). Dip tip of strawberry in chocolate and place on wax paper to dry, repeat for remaining strawberries; refrigerate while cooking brownies.
In a medium bowl, mix brownie mix, soda and egg whites together, pour into your greased glass pan and cook for 22-27 minutes at 350 degrees.
Let brownies cool for at least 30 minutes; once cooled, cut brownies into desired shapes (I made about 20 small brownies) assemble into kabobs with strawberries and brownies (3 strawberries and two brownies per kabob).
