I always loved Valentine’s Day as a child because my parents celebrated the holiday as a family – they had their own date, of course, but they always took us out to celebrate as well. During my marriage, Valentine’s Day was always a special day for my ex-husband and I too, and it was one of the only times that he actually gave me flowers, chocolates and gifts. Now that I am divorced, Valentine’s Day is sort of a tricky day for me…I get so excited about it in the weeks leading up to it, but when it rolls around, I remember that I don’t actually have anyone to celebrate it with. Most of my girlfriends are in relationships, so…yeah, Jenn spends that lover’s day all alone.

Valentine Cupcakes With Homemade Marshmallow Cream Frosting Recipe
- 12 of your favorite cupcakes, baked and cooled
- 1 stick (1/2 cup) butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 1 container (7oz) marshmallow cream/fluff
- Valentine sprinkles
- Wilton XOXO sprinkles
- Beat butter in a mixer for about 30 seconds.
- Add powdered sugar, half a cup at a time and beat well after each addition.
- Beat in vanilla.
- Add marshmallow cream and beat just until combined.
- Place icing into a piping bag fitted with a star tip (Used 2D) and pipe onto prepared cupcakes.
- Add sprinkles.
