Summertime is here, and it’s time for super simple meals so that we can all enjoy those long, lazy days of summer, either with out kids or with our friends! My friends and I have been having a lot of backyard get togethers this summer, and this Easy BLT Pasta Salad Recipe is always a great way to serve dinner without a lot of effort. I even bought a silly little backyard lounge pool for us to sit in on the really hot summer days…yes, it is technically a kiddie pool, but it seats four and it was only $99 on Amazon. What more could we ask for? We have beaches all around us – we just want somewhere to sit while we talk crap about our lives and drink sparkling wine.

An Easy BLT Pasta Salad Recipe

Ingredients:

  • 8 ounces pasta, cooked, drained and rinsed with cold water
  • 1/2 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 teaspoon white sugar
  • 1 tomato, seeds removed and chopped
  • 2 green onions, thinly sliced
  • 2 cups shredded lettuce
  • 6 strips of bacon, cooked and cut into small pieces
  • 1/2 cup finely shredded cheddar cheese

Directions:

Combine the pasta with mayonnaise, chili sauce and sugar. Mix well. Just before serving, add the tomatoes, onions, lettuce, bacon and cheese. Mix well.

Don’t forget to refrigerate leftovers! This Easy BLT Pasta Salad Recipe serves six, but you can easily double or even triple the recipe for super simple leftovers for the next day’s lunch!
