Pear and Apple Bundt Cake Recipe

I’ve been baking up a storm lately…but with my old hosting service, InMotion Hosting, blocking half of the internet from my site, and then transferring over to a new hosting service…

I have hardly posted anything since the weekend!

I baked up this awesome apple and pear Bundt cake last week and had to share with you!

Apple Pear Bundt Cake

Bundt Cake Filling
1 cup light brown sugar
2 gala apples, peeled and sliced with a potato slicer OR diced
1 pear, peeled and sliced with a potato slicer OR diced
(I sliced them thin with a potato slicer but dicing them would work too)

Bundt Cake

3 cups cake flour (you can use regular flour, it just won’t be as fluffy)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
1/2 tsp freshly ground nutmeg
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 1/3 cups granulated sugar
3 eggs
1 tsp vanilla extract
1 1/2 cups plain yogurt


Making the fruit filling

Mix your fruit with brown sugar so that it is evenly coated.

Making the cake

Preheat your oven to 350 and spray the bundt pan liberally with nonstick cooking spray. Mix flour, baking powder, baking soda, salt, and nutmeg in large bowl. Beat 3/4 cup butter (1 1/2 sticks) unsalted butter and 1 1/3 cups granulated sugar in a separate bowl until fluffy.  Add the eggs, one at a time, beating after each one, then mix in vanilla extract.

Using a spoon, mix in flour mixture, then add yogurt and mix well. Do not beat with electric mixer because the batter will get too tough. Pour half of your batter into the greased bundt pan and then add the fruit mixture, then pour the rest of the batter on top.

The batter is going to be really thick so you might have to spread it out with your hands, I did!

Bake until the cake is golden brown and a toothpick inserted into the center comes out clean, about 50 minutes. You can sprinkle with powdered sugar or just eat it like it is!

This apple bundt cake recipe is light and fluffy, not too sweet and the apple and pear flavor don’t overpower the cake, they just add a little something special!

I also made these little mini bundt cakes!

    Oh my yum! My son only likes apples and pears (carrots, too) so this would be a super treat for him! Thank you for sharing. I’ll let you know how much he loves this!
