Kid-Friendly Southwestern Recipe: Santa Fe Chili Ribeyes #LawrysMoms

Last night, I dealt with something that is pretty common in my household – I wanted to make a fancy dish and my family was not too excited about it. I found this amazing recipe on Lawry’s website, for Santa Fe Steak with Pineapple and Bell Pepper Salsa. Only…kiddo wasn’t too keen on the idea of the salsa.

So…I did what most moms learn to do with less-than-adventurous eaters. I compromised.

I made this…

Santa Fe Chili Ribeyes with Roasted Asparagus and Cheesy Mashed Potatoes

Ingredients – to serve 2 people

2 ribeye steaks

Lawry’s Santa Fe Chili Marinade

2 large russet potatoes, peeled and cubed

1/2 teaspon kosher salt and 1/2 teaspoon black pepper

1/2 cup milk

1/3 stick butter

1/3 cup shredded cheddar cheese (we prefer sharp)

1 package asparagus, washed with ends trimmed

Lawry’s Roasted Garlic Salt

Extra Virgin Olive Oil


30 minutes prior to cooking, spread 1/3 cup of Lawry’s Santa Fe Chili Marinade in the bottom of a dish, lay the ribeyes on top and then spread another 1/3 cup over the top. I like to pat it on to make sure it absorbs into the steaks! Put in fridge until you’re ready to cook.

Preheat your oven to 400 degrees and line a baking sheet with tin foil for easy clean up.

Bring a pot of water to a boil over medium high heat for the potatoes, and set your timer for 10 minutes.

Place your asparagus on your baking sheet and drizzle extra virgin olive oil over them, then sprinkle with Lawry’s Roasted Garlic Salt – generously!

Once prepared, put your asparagus into the preheated oven and set your timer for 15 to 20 minutes, depending on how tender you like them. I usually set it for 20 minutes so that the tips are nice and crispy and the stalks are tender.

Now, I usually cook steaks on the grill, but…I was feeling pretty lazy last night, so I just threw the ribeyes in a frying pan for a quick sear – heat your pan up over a medium-high heat – for a few minutes and then transferred to the oven where my asparagus were already cooking away, and let them cook until my timer went off for the asparagus. Because these ribeyes were a little thicker than the ones I normally buy, they cooked for about 15 minutes and came out almost well done. They were perfect! I suggest altering your cooking time if you try this method for different done-ness.

When your timer goes off for your potatoes, drain the water and add your milk, salt and pepper and butter, mixing well. I use my KitchenAid stand mixer…because I paid a lot for it, so I try to justify its existence at every possible opportunity! Once you’ve reached your desired consistency, add your shredded cheddar cheese and set aside.

And then? Well, then you eat!

Dinner was fantastic and I even got the much coveted “This is delicious” from Angeline! We both loved the flavor the Lawry’s Santa Fe Chili Marinade and Roasted Garlic Salt added to our meal. The Santa Fe Chili marinade added a little spice and a lot of flavor to the ribeyes, but it wasn’t overpowering at all. I think that the next time, I’ll add a little extra to my own because it was so good!

I’ve always been a big fan of marinades and I think the Santa Fe Chili is going to become a staple in my fridge! I love how easy it is to spice up a meal with it, and that I only have to add the marinade about 30 minutes before cooking! Also, it’s only about $2.99 at most retailers!

And while I’ve always used Lawry’s Garlic Salt and other seasonings, I think this new Roasted Garlic Salt adds an extra little something to the flavor and I really like that!
