These cookies are like a shortbread cookie, they’re a tiny bit dry and deliciously buttery. This Junior Mints Valentine Shortbread Cookies Recipe is just perfect with coffee and that ooey gooey junior mint center filling…what a winning combination!! Junior Mints Valentine Shortbread Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • 1 egg yolk
  • Americolor Soft Gel Paste in Red Red Color
  • 1 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 box, Valentine Junior Mints

Junior Mints Valentine Shortbread Cookies Recipe

Directions

Preheat oven to 350 and line a baking sheet with parchment paper.

Combine butter, powdered sugar, peppermint extract, egg yolk and color paste in a mixing bowl. Beat on medium speed for about a minute. Stir in flour, baking powder and salt.

Roll dough into teaspoon size balls and place onto a baking sheet.

Bake for 10 minutes or until set and lightly browned on the bottom. Remove from oven and let set for 2 minutes. Place one Junior Mint candy on the cookie and gently press into the center.

Let cool completely before serving.

Makes 18 cookies.
