It’s about 1,000 degrees in Miami this summer. Okay, maybe that is a tiny bit of a hyperbole. Let’s just suffice it to say that it is hot as hell and we are all sweating to death! It’s been so hot that I bought a little lounger pool off Amazon for the backyard! While hanging in the lounger, of course we want a glass of wine and snacks – there are always snacks! This Summer Watermelon Pie Recipe makes the perfect sweet for those long, hot summer days, whether you’re hanging with your friends in the backyard, around the pool, or picnicking at the beach!

 It is so light and refreshing, and not overly sweet. It’s just perfect!

Summer Watermelon Pie Recipe

Ingredients:

  • 1 small package (3oz size) watermelon flavored gelatin
  • 1/4 cup water
  • 2 cups watermelon, seeds and rind removed and cubed in small pieces
  • 1 large tub (16oz) whipped topping, thawed
  • 1 graham cracker crust (9 inch)

Directions:

In a large microwave safe bowl, add 1/4 cup water. Place in the microwave and heat until boiling. Remove from microwave and stir in gelatin until dissolved. Let set until cooled to room temperature.

Stir in whipped topping and watermelon. Spoon mixture into prepared crust. Refrigerate for 4 hours or until ready to serve.
